5 grains with cheese, carrots, spinach, courgette and onion

Becoming more aware of healthy eating, it was most difficult for me to find quick tasty alternatives for evening meals. I found a mixture of five grains (bought at local health food store) to be extremely satisfying. The grains have a well-rounded, nutty flavour. They are stuffed with proteins, vitamines and minerals and I mix them up with a few other ingredients for a delicious super healthy meal.

Recipe for 2

enough grains mix (bought at local health food store) for two persons, as described on the package
1 zucchini
2 paprikas
2 medium-size onions
2 cloves of garlic
olive oil
200g of your favourite cheese (I use cheddar or brie)
5 small carrots
100g fresh spinach

Boil the grains in water. Add the chopped carrots into the water with the grains, still on heat. Drain this mixture when done, only leaving a little bit of water in the pan. Add the fresh spinach leaves into this pan and mix them through with the carrots and the grains (the spinach will shrink from the heat). Then drain the water again. In a frying pan, heat up olive oil on low heat and add chopped garlic and onion. Leave simmer on low heat for 3-5 minutes. Add chopped courgette and chopped paprika into the pan, only increasing the heat slightly. Taste this mixture in about 10 minutes: when it’s at your kind of crunchy/soft, take it off the heat. Mix in a serving bowl with the grains mixture. Now you can also mix in pieces of your favourite cheese. This last ingredient will contribute to you taking up all the fat-soluble vitamines from this dish extra well!
