Couscous Lunch for Leaders

This nutritious and delicious lunch take 10 minutes to prepare and does not need to be re-heated. It will keep you energy levels high throughout the afternoon! It contains avocado, which contains healthy fats and helps hydrate your skin in the winter. The raw paprika and tomato are a great source of vitamin C and other antioxidants, while being very low on calories!

Ingredients (for 1)

Half a cup couscous and one cup boiling water
1 avocado
1 ripe tomato
Half a handful of raisins (soak in water for 10 minutes before use)
1 yellow paprika
Greek feta cheese to taste
Olive oil to sprinkle
Optional: chorizo sausage

1. Place the couscous in a bowl and add boiling water. Cover and leave for a few minutes.
2. Chop up the veggies and feta.
3. By now the couscous will have taken up all the water ( if the couscous is still hard, add a bit more boiling water).
4. Mix all the chopped ingredients and the couscous together. Pack in a tupperware and bring with you to lunch! Enjoy.
