A tremendously easy dish to make. Also, super healthy on a budget. Plus a rare source of vitamin D in the winter days and an important source of zinc for cell-turnover.
Recipe for 2
2 large sweet potatoes, unpeeled if organic, cut in 0.5cm thick slices
300g fresh spinach
2 tspn nutmeg
2 cloves of garlic
125ml sour cream
75g grated cheeze
1 tbsp olive oil
Pre-heat the oven to 200 C degrees. In a sieve, pour boiling water over the spinach and let drain. Oil an oven dish with olive oil. Place a layer of sweet potato in the oven dish. Mix the drained spinach with nutmeg. Place a layer of spinach and nutmeg mix onto the layer of sweet potato. Then lay another layer of sweet potato. Mix sour cream with finely chopped garlic. Pour over the sweet potatoes. Then add a layer of grated cheese. Bake in the oven for about 50 minutes. Enjoy!
