Brunch Wraps with Guac & Tomato Salsa // G’ MORNING

GOOD MORNING WORLD! Breakfast is labelled by many as the most important meal of the day. While some people take that as permission to eat whatever they want at breakfast, which I am also sometimes guilty of, I also take it as permission to stock up on lotsa nutrients first thing when I am starting my day. On Sundays, the morning starts a little slower than usual… so there’s definitely time to whip up these wraps (yey!).

Brunch Wraps with
Guac & Tomato Salsa

Prep time: 10 minutes. Serves: 2.

Tomato, 1 (get the ripe and flavorful, organic tomatoes)
Small onion, 1
Lime juice, 1 tablespoon
Fresh cilantro (coriander), 1/2 handful
Avocados, 2, ripe
Eggs, 4
Oil for frying (I used sesame cooking oil)
Corn torillas, 4
(Optional: feta cheese, red chili pepper, raddish)

1. HEAT UP THE OIL in a sautee pan and when it gets hot, pour in the eggs and fry on medium heat until the egg whites and the yolks have settled.

2. IN THE MEANWHILE, peel the avocado and place in a bowl. Add the lime juice and finely chopped cilantro to the avocado and mash up with a fork. Finely chop red chilli pepper to your liking if you like a spicy guacamole.

3. IN A DIFFERENT BOWL, mix finely chopped tomato with finely chopped onion. Now you have your eggs, your guacamole and your tomato & onion salsa! You can also crumble some feta cheese if you like the flavor, or are in need of an anti-hangover brunch ;). Add finely sliced raddish if you’re in the mood for extra bite.


STARTING YOUR DAY with a good portion of protein, veggies and herbs will give you an amazing feeling! This meal is also budget-friendly, especially if you can find a bunch of avocados on sale (in Leiden, you can buy 5 ripe avocados for 1,- euro on the Saturday market).
