Making this soup is super easy and rewarding. The flavor is summery and comforting, yet there is absolutely nothing unhealthy about it. It’s perfectly creamy without using any dairy, and if you use a good quality organic vegetable stock, the flavor will be just right. You will need an immersion blender (Dutch “staafmixer”) to blend all the ingredients together. Broccoli and zucchini are now in season, so grab the opportunity and enjoy this healthy meal!
Serves 4. Cooking time: 20 minutes.
Broccoli, 1 piece, roughly chopped
Zucchini, 1 piece, roughly chopped
Shallots, 3 pieces, finely chopped
Olive oil, 3 tbsp
Vegetable stock, enough for 1L
Boiling water, 1L
Fry the shallots on olive oil in a deep pan for 5 minutes on low fire. Add the zucchini and broccoli pieces, pour over the boiling water and add the vegetable stock. Let the whole mix simmer for 20 minutes. Then take off heat and blend with an immersion blender. Serve on its own or with some grilled herby garlic bread for a more substantial meal.
