ROCKY ROAD IS ORIGINALLY AN AUSTRALIAN CONCOCTION – in the 19th century, a lot of the candy that was shipped to Australia from Europe would become spoiled on the way. By mixing all this candy into one big sweet pile (a rocky road), it was easier to sell than the individual candies.
IN THE STATES rocky road is a huge hit, typically made with chocolate, candies and marshmallows. While I have no doubts that this tastes great, I also have no doubts that it causes cavities, so obviously it’s nice to have a bit of a healthier – but still sweet and delicious – alternative recipe for an awesome chocolate-y rocky road!
MY CHOCOLATE ROCKY ROAD IS gluten-free, dairy-free and filled with nutritious ingredients!
HEALTHY CHOCOLATE Rocky Road
with NUTS & BERRIES
Makes 10-12 rocky road chunks. Prep time: 5 minutes. Waiting time: 2 hours (totally worth it).
Goji berries, 20g
Nuts, walnuts/almonds/pecans/hazelnuts, roughly chopped, 30g
Dark Chocolate, 70% cocoa content & dairy-free, 100g
Coconut oil, 2 tbsp
Line seed, 1 tbsp
Coconut flakes, 2tbsp
1. MELT THE CHOCOLATE and coconut oil au bain-marie (in a bowl above a pan with boiling water). When they’ve melted, stir and take off fire.
2. ADD IN all the other ingredients and mix well.
3. POUR INTO a flat-bottomed dish covered by parchment paper (this will make the rocky road easy to take out once it’s settled).
4. REFRIGERATE for 2 hours or until the rocky road is set. Enjoy! Store leftovers in the fridge.
