Easy Almond & Apricot Truffles

Did your taste buds get excited just by reading the title? Excellent, so did mine! In this post, I reveal a recipe for marvelous almond-apricot truffles roller in coconut flakes. These truffles are gooey and tasty, and a great alternative to store bought sweets. They are dairy-free, gluten-free and without added sugar. A Paleo fan would approve.. I think! Here’s the recipe:

Prep time: 10 minutes. Waiting time: 1 hour. Makes 10-15 truffles.

Dried apricots, non-sulfite treated, 150g
Almonds, 150g (or walnuts/pecans, or a mix of all three if you like)
Coconut flakes, 4 tblsp
Water, 1-2 tblsp

 

1. Place the almonds and apricots in a food processor. Mix until turned into a paste. Add water if the mixture is too thick.

2. Spread coconut flakes out on a flat surface. Roll small balls of dough between your hands, then roll through the coconut. Repeat until the batter is finished (resist eating all the truffles as you go!).

3. Place truffles on a plate and refrigerate for at least 1 hour so they set. Then indulge in these nutritious little truffles!
