If I eat meat, which I don’t do often because there is so much other food to love, I eat organic meat because of a few important facts. First of all, if you eat meat you want it to be from animals fed on their natural diets (for example, cows fed on grass). This is the only diet those animals are genetically made to handle. When animals are fed a diet that is not natural to them, they become sick, and when we eat the meat of those animals, we eat sickened meat. Secondly, you want your meat to come from animals who have had space to move around and were not treated with antibiotics. Likewise, and perhaps most importantly, you want meat from animals that have not been treated with growth hormones because eating this meat causes chronic inflammation in our body. I want to focus on a delicious feel-good recipe here, so will stop with the facts. Recipe for 2
4 large organic potatoes (no need to peel them), cut in bite-size pieces
2-3 tbsp olive oil
2-3 tsp rosemary powder or a few fresh rosemary stalks of course
a little bit of salt & more pepper
200g organic minced beef
1 large onion, diced
2 cloves of garlic, finely chopped
1 tbsp of bread crumbs
2 tsp paprika powder (or one finely chopped small red pepper if you like food with bite!)
sesame oil for frying
1 green salad, sprinkled with olive oil and vinegar
Preheat oven to 220 C degrees. Place the cut potatoes in an oven dish. Add the olive oil, rosemary, salt and pepper and mix it all around with a spoon so all the potatoes are about evenly covered with all. Bake in the oven for 45-55 minutes (until the potatoes are a bit crunchy, like on the picture). In the meanwhile, in a bowl, mix the minced beef with the egg and breadcrumbs. Add diced onion, finely chopped garlic and paprika powder. Mix so all are evenly spread through the meat. Now make golf ball sized meat balls. Heat up sesame oil in a pan and fry the meat balls for 3-4 minutes on each side on medium heat. Then, in the last 5-10 minutes of potato baking, add the meat balls to the potato oven dish, mix them through and let them continue baking with the potatoes until the potatoes are done.
Serve with green salad. Enjoy!
